I'd hire Gene Chizik:

Everyone talks about how bad Chizik did when he was at Iowa State, but Rhoads took his recruits to back to back bowl games after.

This would be an under the radar very good hire. He immediately improved UNC's Defense and probably learned from mistakes while coaching in the toughest neighborhood in D1 Football(SEC West). It's all about being a good fit and he can recruit.

Because they are defensive minded. They are not Art Briiles, Tom Herman, etc. They don't have a resume of innovative offensive football and we don't have a budget to land an OC who is proven. We were lucky to get Taafe and now he retired.

When you're last in the FBS, it's time for a nearly complete offensive overhaul. Something quite drastic. Even though our defense isn't anything special either.

I've seen some articles about the prospect of Chizik becoming a HC in college football again. He has essentially said every decision he makes from now on will be a quality of life decision. The sense that I got is that he isn't going to go someplace he doesn't want to be just to use it as a stepping stone to get back into a major job like he had at Auburn. Considering his ties here, the opportunity to live and recruit in FL again, the reasonable expectations of the fanbase compared to some others (like Miami), and the possibility to be put in a position of great power and stability in this head coaching position -- If there's anyone out there with the potential to take over and set up another 10-15 year long regime I could see Chizik as that guy. Since Hitt is still ultimately in charge and he liked the arrangement with GOL, I wouldn't be shocked to see this happen. May not be the most imaginative or daring move, but I think it wouldn't be a major bust either.
 
the only thing that would worry me is that with a Championship already at Auburn if he will have an entitlement of feeling above the Program.

vs a hungry first time HC eager to prove himself like Collins I don't think UCF would get that
 
What I remember about Chizik's defenses when he was here is that he would take a bunch of undersized unrecruited guys and run schemes that fit them and made them successful. His defenses were fun to watch.
