Placing bets in Vegas

I'm in Vegas for a few days, and thinking about putting some bets on both UCF and Cincinnati for the upcoming games. Any particular venue that's better? I'm staying at the Paris, just across from the Bellagio and Caesar's.

Also if I do win, would I need to come back to Vegas to collect?
