You don't get to be the world's largest franchise without cutting some corners.
But without actually seeing the study, and only viewing the linked video, the other 50% is soy. Subway admits to putting 1% soy as filler and preservative, but denies the claim.

Capitalism <> marketing something as 99% chicken when it is really 50% chicken. That's fraud.
