BYU is an interesting case. Their dominant message board is Cougar Board, straight out of the 1990s with a thread-view format. Other sites get little traffic. Coverage wise, they get excellent coverage from BYU TV, podcasts and Utah newspapers.

K-State has several sites with traffic. They are the only new Big 12 school to have an On3 site, and that one appears quite active. The 247 site is also active (both On3/247 site were on Rivals at one point).
