Publix is no longer pressing cubans

Happened more than a year ago up here at the Tally locations. I talked to one of the muckity mucks about it. He said that the store isn't just focusing on south florida anymore. They need a uniform product and the stores in Georgia, Alabama, and Tennessee don't sell it pressed. If you go into a restaurant there the Cubans aren't pressed so nobody orders it that way in those stores. so the pressing stopped. They will mash it down for you by hand at the end if you ask, lol. I couldn't believe he said that.

Mashing it down by hand is not pressed. Pressed involves heat + press. Publix probably doesn't want to mess with heat.
 
Its about making stores buy equipment that they will rarely, if ever, use.

Noticed this months ago. They got rid of the old fashioned presser and replaced it with the toaster machine that you used to see at Quiznos(rip). The Cubans don't taste the same
