This is incomplete as I'm awaiting contract information for two more coaches but here's a preliminary look at football assistant coach salaries heading into UCF's first season in the Big 12.
The initial contracts for Gus' inaugural staff were set for two years, set to expire Jan. 31, 2023. These new contracts were all signed around that time frame with one update:
DT coach Kenny Martin initially signed a $300,000 contract on Jan. 28, 2023 but that was updated on March 1 to reflect a new salary of $450,000. This would appear to coincide with interest from other schools.
Here's a look at the updated salary numbers:
Addison Williams (defensive coordinator, secondary) - $700,000
Darin Hinshaw (offensive coordinator, quarterbacks) - $600,000
Herb Hand (co-offensive coordinator, offensive line) - $500,000
David Gibbs (co-defensive coordinator, secondary) - $475,000
Kenny Martin (defensive tackles) - $450,000
Brian Blackmon (tight ends) - $300,000
Kenny Ingram (defensive ends) - $275,000
Ernie Sims (linebackers) - $250,000
Grant Heard (wide receivers)
Kam Martin (running backs)
All coaches are in line to receive a "bowl bonus" which would equal half of one-month salary. If UCF wins the conference championship game, the bonus is equivalent to a full month salary.
All coaches participate in the UCF vehicle program. UCF either provides a courtesy auto or they receive an auto allowance.

For reference, here is what UCF's 10 assistant coaches were making for the 2022 season according to USA Today, though I've been told Kenny Martin's salary this past year was higher than $175,000:
