Got me thinking...

When I visited Vietnam, I realized they have the best coffee in the world, by far. It really can't be compared. It is rich, oily, and chocolaty. Delicious.

Ever since then, I've been buying Trung Nguyen brand from the Asian supermarket.

To make it even better, it tastes even better as coldbrew. I can make a 2 cup batch of Vietnamese coffee using a phin filter and turn it into a huge pitcher of coldbrew. A $6 can of coffee makes 10+ pitchers of the best coldbrew on the planet.

I would have a hard time naming a single favorite but if I had to it would be a bean from Papua New Guinea roasted to just after 1st crack. It has berry tones, which I prefer to a nutty flavor like Ethipoian beans have. I also love single origin Kona roasted to just before 2nd crack. Very chocolatey. Costa Rica has a lot of really good farms on top of the hill that make for great medium roasted beans as well. I'd round out my top 5 with a medium roasted Altura and a dark roasted Bolivian. Anything roasted past that and I'm not a big fan of. Italian and French roasted beans are like a char broiled steak to me- you taste the roast instead of the bean.

There are a ton of really good farms all over central america that make good beans at different times of the year too if not roasted too dark and lose the oils.

I love a super-oily coffee.
The best cup I've had on U.S. soil was a freshly roasted Ethiopian, surprisingly from the Starbucks Roastery in Seattle. Oily as f*ck.

That oil exists in all beans, the roasting process brings it out to the surface. Longer the roast- the more oil comes out and more caffiene is removed from the bean. We always laughed when people would come in and say they need a lot of caffeine so give me the darkest coffe you have, lol. Sorry bud, you want the lightest roast we've got.
 
If you like Vietnemese and Ethiopian beans (since it was starbucks Im assuming it was Yrgacheffe) then try Tanzanian peaberry. Very similar and holds its flavor more than others at different roast levels.

Is chemex worth it and is it really different than normal drip?

I havent tried chemex but it looks to me like it would be closer to being an extractor than a drip brewer would be. Probably just depends on your personal taste: the chemex would be a little smoother but not quite as strong if all things are equal. If you want an idea then go to a coffeeshop that uses a Fetco extractor or a higher dollar bun brewer and get a cup, then have them grind that same bean on an auto-drip setting and run it through your home brewer soon after.
 
Coffee always taste better served in good china. Go figure.

PS. I always make mine the night before so timer goes off and its ready when I wake up.

Before coffee makers had timers my aunt used one of those timers you would use for Christmas lights to start a morning pot.
