OT: Microsoft OneNote

My wife and I have a business and we're its only employees. Yet, we still accumulate a good amount of client paperwork. It has become quite cumbersome to deal with and I am constantly asking myself "What the heck are we doing? Its 2022. Do we need to keep all of this paperwork for our active clients?"
A friend of mine says we need to invest in a Client Management System. But, they can be pricey and, from my search online of multiple systems, offers far too many in-program options that we just wouldn't need. Why pay for things we're never going to use? He also is not a fan of cloud storage for our business, but we travel relatively often and love the ease of access to the cloud. Of course, we use password-protection and encryption for our data.
Which brings me to Microsoft OneNote. I believe it will meet our needs for what we do. I love that we can password-protect our sections for an added layer of security.
Does anyone use it for their work or business? Can I store my data locally on a shared external drive and not on the cloud?
Any advise or opinions provided would be greatly appreciated!! Thanks!!
