Summary of Key Observations/Recommendations
UCF Athletics is bringing forward a proposed agreement to the Board of Trustees that stems from the Invitation to Negotiate (ITN # UCFAA ITB 2025-01AH), which was initiated in January 2025. This ITN was developed with the goal of securing a forward-thinking and proactive partner to manage food services across key UCF Athletics venues, including FBC Mortgage Stadium, Addition Financial Arena, The Venue, John Euliano Park, UCF Softball Complex, UCF Soccer Complex, the Garvy Center, and other facilities identified in the solicitation. The resulting agreement outlines exclusive rights and responsibilities for Concessions, Premium Food Services, and Training Table Services, as well as a non-exclusive opportunity to provide Catering Services within the Kenneth G. Dixon Athletics Village.
To ensure a thorough and thoughtful selection process, an eight-member committee composed of athletics and university leaders reviewed proposals from the industry’s top providers. Out of nine (9) companies invited, four (4) declined to participate, and two (2) submitted a joint proposal – ultimately leading to four competitive bids. After careful evaluation, the committee selected Levy as the recommended partner due to their strong combination of capital investment, innovative design concepts, competitive commission offerings, and the ability to deliver high-quality, cost-effective training table services for student-athletes.
This agreement marks a significant step forward for UCFAA and directly aligns with our strategic objectives. It will generate meaningful revenue through a substantial signing bonus and an enhanced commission structure on food and beverage sales. In addition, Levy’s commitment to upgrading fan concessions through capital improvements will help elevate the game-day experience across multiple venues. Their national reputation, paired with strong local infrastructure, makes them a powerful partner in fueling both fan engagement and student-athlete performance. Ultimately, this partnership not only strengthens UCFAA’s operational excellence, but also reflects UCF’s rising stature as a member of the Big 12 Conference, reinforcing our regional and national momentum.

Levy now serves fans at iconic venues spanning every major sports league and college athletics, as well as marquee events like the Kentucky Derby, US Open Tennis Championships, Grammy Awards, Coachella and Stagecoach Music Festivals, and many more. Notable venues include Wrigley Field, Dodger Stadium, Barclays Center, United Center, Crypto.com Arena, Intuit Dome, Kaseya Center, Mercedes-Benz Stadium, Soldier Field, and Levi’s Stadium, among others.
Locally in Orlando, Levy has partnered with Orlando Venues and the Orlando Magic at Kia Center for more than a decade. The 2024-25 season marked an expansion of the arena’s Orlando Table program, an initiative to showcase local businesses. Over the past four seasons, the program has created significant opportunity for local restaurants and purveyors inside the arena on game and event days.
Levy serves fans and guests at multiple other locations in Orlando and Central Florida, including Camping World Stadium and the company’s two restaurants in Disney Springs, Paddlefish and Terralina Crafted Italian. Beginning this summer, Levy will serve as the official food and beverage partner of the ESPN Wide World of Sports Complex.
Levy demonstrates a commitment to delivering high-quality, tailored dining experiences that support both fan engagement and athlete performance across collegiate athletic programs. The company’s roster of college partners includes power programs like Ohio State, Notre Dame, Alabama, Texas A&M, Wisconsin, Colorado, Oklahoma, Air Force Academy, Indiana and Purdue, among others.
Implementation Plan
A transition team will begin work immediately to ensure minimal disruption to the food service offerings in preparation for the upcoming UCF Athletics Village events schedule starting July 1, 2025.
Resource Considerations
The proposed structure of the agreement is a 10-year partnership with two (2) mutually optional renewals for five (5) years each.
